I'll let Lesley describe that one, in the asado is what we call "achuras" was hard, but I make her try them..:)
(ok only one of these things in the picture is NOT part of the cows intestines, Cris likes the little squiggly ones that are the small intestine.   I have to admit that tasted better than the others, they just get increasinly fatter and greasier as you get close to the well you know what!!  Even Cris says he doesnt eat that part but some people do. Yikes!!)
